Scrapbooking Quick Page

I'm very tired tonight but I forced myself to scrapbook a little bit - if for nothing else to erase the bad workday from my brain.  Of course I didn't want to do any planning but this time my winging it didn't turn out too bad.  I basically just printed out the last four pictures from St. Patrick's Day New Orleans, squashed them in the middle and decorated with the remaining St. Patrick's Day stickers.  Nothing too complicated...my brain can't handle complciated tonight! I wish I had some alcohol lying around, can't wait until the long weekend! I'm really using that exclamation point tonight huh?

Smashup Sunday

Even though I say it almost every entry (probably the reason no one reads this), I really need to start motivating myself to be creative more.  Granted this week I do have excuses. I was out most of the week trying to erase a guy from my memory using an unreasonable amount of alcohol (didn't work in case you were wondering).  Tonight I decided to jumpstart a bit by doing a Smash book page.  I really need to finish my New Orleans scrapbook as well...Alaska is like 3 weeks away (wooooo).  I can't be doubled up on the scrapping, then it really will never get done.  Focusing on this may also be a way to make myself feel better. I've been a bit down this week for reasons mentioned earlier.

Anyway, here is my page..just a bunch of things ripped out of magazines that I really liked.

New Orleans Scrapping

Sad news today. My favorite scrapbook magazine Scrapbooks, Etc is folding. The last issue will be on newstands in June.  There aren't many magazines for scrapbookers out there and I love to glance through to them to get layout ideas. I guess I'l have to find some more new scrapbooking blogs to read. 

Speaking of blogging and scrapbooking, I've been working on my New Orleans scrapbook this week.  Last week it was nearly impossible to get me out from under the blanket on the couch, this week I can't stop doing. I don't know what gives me the extra boost of motivation but I wish I had it all the time.

I made two scrapbook pages. The first one I don't really like so much (what else is new).  It's a little sparse for me. I added the ribbon border a few days later. It helped a bit but still not satisfied.  The second one I actually really like for once. It's probably because I actually planned it out for once.  I don't know why its so hard for me to plan the scrapbook pages in advance. I plan everything else in my life. I'm really good at it and it obviously helps.  Maybe this is a first step...

Stuffed

That title is not referring to how I feel right now but rather what the theme of this week is turning out to be.  Tonight I made stuffed chicken and tomorrow I plan on making stuffed peppers. I didn't even realize when I was food shopping that I had planned two stuffed items into my weekly meal plan..but I like it. Both are experiments...today's is actually successful!  I made chicken stuffed with baby spinach, pine nuts, roasted peppers and mozarella cheese. Anytime I've attempted stuffed chicken in the past the cheese has exploded out from the chicken and ruined everything.  I don't know what I did differently this time, but it was completely successful (and really easy).  All you have to do is saute the baby spinach, pine nuts and roasted peppers in olive oil for a minute or two, until the spinach is wilted.  Then you take thin chicken cutletes, place the spinach mix towards the top, top with the cheese and roll really tight.  Dip the cutlets in egg and breadcrumbs, and then cook in olive oil until the chicken is cooked through (flipping once - carefully). 

I also took 600 pictures of this meal until I found one that wasn't too blurry and out of focus. I busted out my tripod for this so appreciate it!
